This inspiring and informative book distils all their shared wisdom – demystifying ingredients and methods for readers, explaining not just what to buy (and why), but how to cook it, serve it and enjoy it and make your ingredients sing. The Borough Market values of shopping locally, and supporting smaller, ethical and sustainable producers shine throughout the book.

Like a stroll around the Market, the book’s eight chapters guide us through the different areas of produce found there. The recipes are inspired by the traders’ expertise, often with references back to the knowledge pages. Dishes range from crowd pleasers such as Parsnip Gnocchi and Smoked Garlic Butter with Crisped Sage Leaves and Hot and Sour Papaya Curry with Prawns, to more celebratory dishes like Stuffed Hogget Leg with Seasonal Sides, and Asparagus with Quail Eggs and Shaved Truffle, alongside comforting favourites such as Tartiflette and Fishmongers Pie, plus sumptuous puddings and drinks to accompany certain dishes.
